Peanut Butter Cups

If you were a fan of the old school Reese's Peanut Butter Cups you are going to be even more of a fan of these. They can be whipped up in no time at all and they pleasantly surprise any suspicious recipients who aren't quite up with how good 'healthy' food can be. 


For the chocolate 

1/2 cup melted coconut oil 

3/4 cup cacao or cocoa 

1/3 cup honey/brown rice syrup/coconut nectar 

For the filling 

1 tbsp cashew butter 

3 tbsp peanut butter 

1 tbsp honey/brown rice syrup/coconut nectar 

alt to taste 


For the chocolate 

1. Melt the coconut oil in a dish over a pot of boiling water 

2. Once melted, add the other ingredients and whisk until combined 

3. Taste and adjust sweetness to your heart's desire then split mixture in half, pouring one half into moulds and placing in the freezer

For the filling 

1. Combine all the ingredients in a bowl until smooth 

2. Remove chocolate from the freezer and pour mixture into each mould in even amounts. Return to freezer to harden 

To finish 

1. Pour the remaining chocolate into the moulds to cover the peanut butter, sprinkle with sea salt and return to freezer to set completely (around 30 minutes) 


  • You do not need any fancy moulds for these. You can use cupcake paper pans (in mini size is best) or ice cube trays, both things you might have at home. You can get creative and make some moulds from aluminium foil if you're that way inclined
  • The salt sprinkle on top of these things makes them luxe and craving-worthy. Don't avoid it and definitely use salt flakes if you can 
  • Store these in an air tight container in the fridge. They'll be gone before they have the chance to go bad so don't even worry about it.
